It's Been Too Long

Normally when I miss a day or two I do my best to go back and fill in the blanks. This time... it's been too long. We just went through the 4th of July weekend and I can not remember everything that I've eaten to fill in those blanks. I did not waiver from my sugar free diet. While others were eating ice cream, burgers and dogs and cookies beautifully decorated... I ate my usual collection of sugar free white starch free foods. That is hard to do on the holidays because there are so many "good" foods that we are accustomed to eating on certain occasions.

I do have to laugh a little. My wife made some beautiful cookies for the 4th of July with red and blue sprinkles. I was busy taking care of some responsibilities elsewhere and did not have anything to eat. She agreed to bring me some sugar free peanut butter and jam sandwiches. I took a bite... then another and thought "boy this bread is sweeter than it should be". I took a close look and there were red and blue sprinkle on the bottom of my sandwich! LOL She had made the sandwich on the same counter top as the cookies :) I picked 'em out and ate my sandwich... thanks Honey!

Last night I did eat something new. We had a container of raw sliced mushrooms in the refrigerator that needed used so I thought about making some mushroom gravy to put on some chicken. I used olive oil to cook down the mushrooms then added whole wheat flour. Once that thickened I poured in the milk, seasoned with salt and pepper, reduced to simmer and voila... gravy. I put some chicken tenders in a small baking dish and covered with the gravy and baked at 400 for about 30 minutes. I put all that over some long grain brown rice... yum.
